Mexican Rice  ( half cup serving size )

Bacon drippings or oil     2 cups               2 gallons 
Rice, long grain          20 cups              70 lbs.
Tomato sauce               1 #3 can            12 #10 cans 
Sliced onion               1                   16  
Water                     36 cups             ___  as needed 
Salt                       1 Table spoon        2  lbs. 
Chili Powder               3 Table spoons     120  Table spoons
Chicken Bullion            6 Table spoons     5.5  Oz.
Peas & Carrots             1 lb.               32  lbs.
  (or similar veg. mix)

Use 16x24x10 inch rice pans with cover for larger recipe. 
Add rice to oil over burner and cook to brown the rice. 
Add tomato sauce, veggies, seasoning, water and bring to boil. Stir frequently.
Place cover on pan and cook in 400 degree (F) oven for 35 min.
Stir rice to mix all ingredients when done.
